Nicolas François Billecart and Elisabeth Salmon founded Billecart-Salmon in the village of Mareuil-Sur-Aÿ in 1818. Mathieu Roland-Billecart is now the 7th generation head of the House, which possesses 100 hectares of vines planted on the 300-hectare estate, across 40 crus of the Champagne region. The majority of the grapes come from a radius of 13 miles around Epernay; where the Grand Crus of Pinot Noir, Pinot Meunier and Chardonnay co-exist, in the ethereal vineyards of the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs. Thanks to the longevity and immense pride of the family, Billecart-Salmon is known and respected worldwide for its incredibly consistent house style. Essential in this mission has been the dedication of Denis Blée, Vineyard Director, and François Domi, Chief Winemaker— who after 33 years working at Billecart-Salmon—handed over the baton to Florent Nys. Florent has been working as an apprentice under the watchful eye of François since 2005 and is ready to take the reins!
The flight will feature the non-vintage cuvées: Blanc de Blancs Grand Cru, the Brut Nature, the Brut Rosé and the Brut Sous Bois, which is a special bottling of equal parts Pinot Noir, Chardonnay and Pinot Meunier that was fermented in French oak barrels or 'sous bois', (all other cuvées except the vintages are stainless steel fermented) and aged for five years on the lees before disgorgement. The special vintage cuvée of the evening is the 2013 Extra Brut Grand Cru, which is a blend of 65% Pinot Noir from Montagne de Reims and 35% Chardonnay from the Côte des Blancs.
