- Egly-Ouriet "Les Vignes De Vrigny" 1er Cru Pinot Meunier with Foie gras Pastrami, onion Brioche.
- Ernest Remy Rose’ de Seignee Grand Cru 2011 Pinot Noir with Spanish tortilla, manchego cream and Pata Negra.
- Varnier Fannier Brut Blanc de Blanc with Branzino tartar, lemon puree, bergamot dressing and salmon caviar.
- Ernest Remy Grand Cru 2006 Pinot Noir Brut with Lamb Croquette, smoked chipotle Jam.
- Dom Caudron 50/50 vintage 2000 with Kumamoto Oyster, raspberry mignonette, cucumber and ossetra caviar.
- Mumm Cordon Rouge 1985 with Crispy Brioche, seared yellowfin tuna, castelvetrano olives salad and roasted piquillo peppers
