First, we taste the wines blind (bottles are bagged, we don’t know what’s in the glass). This psychological process forces us to concentrate harder to discern each wine’s nuances: aroma, flavors, acid, tannin, balance, finish, etc.) Nothing is pre-conceived, it’s like learning on steroids!
