We will compare and contrast East Coast and West Coast oysters, showcasing the distinct characteristics that make each unique to the palate. You will learn the importance of salinity in oyster selection, and the differences between the Atlantic and Pacific Oceans' impact on the shellfish. Six wines have been hand-selected to pair wonderfully with the oysters. You will experience the intricacies of each wine's flavor profile and quickly understand why some wines make a perfect complement to these delicate creatures, while other wines steal the show.
