Course one Asparagus panna cotta, crustacean oil, watercress, wild leeks

Course two Tartar of beef, wild onion, preserved mushrooms, mesquite creams

Course three Tagine of striped bass, wild papalo, preserved citrus, fennel, saffron, spring onion, honey pickled strawberry, spring pea chermoula

Course four Salt roasted beets, wood cream bavarois, citrus, fermented beet greens

Course five Hen ballotine, morel mushroom, sweetbreads, wild garlic

Course six Lions mane mushroom, tagliatelle, lamb shank, wild verbena

Course seven A bar n wagyu ribeye, sorrel, black garlic, sauce of morel mushroom & nettles

Course eight Strawberries & cream, wild herbs
