In celebration of the day that keeps our calendars – and our kitchens – aligned with the seasons, the Cakebread Cellars Resident Chefs have invited three of our favorite game purveyors to present a menu that leaps, hops and waddles! Chris Hughes of Broken Arrow Ranch, Mark Pasternak of Devil’s Gulch Ranch and Jim Reichardt of Sonoma County Poultry will be on hand to share the history of their properties and the practices that helped them become leading purveyors for fine dining establishments in Napa Valley and beyond. Paired with Leap Year vintages of Cakebread Cellars wines, the experience will have you jumping for joy!

To start, our 2016 Sauvignon Blanc and 2016 Rubaiyat will highlight the bold, bouncy flavors of a selection of hors d’oeuvres: Vadouvan Spiced Fried Quail, Empanadas with Spiced Duck and Green Olives, and Crostini with Tuscan Style Rabbit Pate and Wild Mushrooms.

At the table, begin with 2012 Chardonnay Reserve and Broken Arrow Ranch Venison Carpaccio with Garden Mache, Carrots, Artichoke Chips and Shaved Pepato. Next, Devil’s Gulch Rabbit “Bolognie” with Broccoli di Cecco, Baby Turnips, Spring Garlic and Pickled Fennel will be paired with our 2012 Pinot Noir Annahala Ranch.

The minerality, dark fruit and structured tannins of our 2008 Benchland Select Cabernet Sauvignon will balance the depth and richness of our main course: Scott’s Brazilian Feijoda with Black Beans, Liberty Duck Confit, Venison Osso Buco and Smoke Venison Sausage. Sweet sips of our 2016 Late Harvest Sauvignon Blanc will round out the evening with Meyer Lemon Curd Pavolova with Huckleberry Sauce.

Devil’s Gulch Ranch – Nicasio, California

Mark and Myriam Pasternak’s ranch, operated with the support of their two daughters, Lydia and Kyla, dates back to 1864, when two Union Army Civil War officers purchased 873 acres to start fresh in California. In 1971, Mark Pasternak purchased the heart of the ranch (65 acres), moved there, and began the creation of the ranch as it is today. The remainder of the 873 acres was later purchased by the federal government in 1980 and is now part of the Golden Gate National Recreational Area. 

 

Sonoma County Poultry – Penngrove, California

Sonoma County Poultry was founded in 1992 by Jim Reichardt, a fourth-generation duck farmer, in response to chefs’ demands for a larger, meatier, more flavorful duck. His “Liberty Ducks” are a strain of Pekin Duck that was developed in Denmark and is suited to a slower, less stressful style of rearing.
