This unique 40 contact hour upper level college like course focuses on developing technical wine and food pairing skills -- and is the only course of its kind offered in the United States.
A combination of lectures, tastings, and pairing exercises will allow students to develop an advanced understanding of wine and food pairing.
Each class includes a multi-protein, wine-paired meal - prepared by one of our professional chefs - to illustrate the impact of sauces, spices, and cooking techniques on proteins when making wine pairing decisions

COURSE INCLUDES:
A multi-protein meal with wine pairings each class
Tastings of approximately 40 wines
300 pages of educational material specifically developed for this course
A 4-course graduation dinner with wine pairings done by students

CLASS MEALS:
Each class includes a multi-protein meal - prepared by one of our professional chefs - with 5 wines. The purpose of the meal is to illustrate the impact and importance of sauces, spices, and cooking techniques on proteins when making wine pairing decisions.

Below is an example menu from the Fish and Shellfish class, which exemplifies the range and caliber of food served during each class:

"Seared Tuna and Creamy White Beans and Aioli
Tilapia Fish Sticks with Remoulade Sauce
Smoked Trout Mousse with Orange and Chives
Fried Catfish Taco with Chipotle Slaw
Seabass Ceviche
Maryland Crabcakes"

All dishes are served as small plates.

The final class is a wine dinner August 07 beginning  at 6pm
