Riesling is the great grape of Germany and most of Germany's best wines are made from it. The secret to a truly spectacular Riesling lies in the balancing act between sugar and acidity. When most of the sugar is converted to alcohol (higher alcohol wines like 12-14%) the Riesling expression is often dry or sharp, while those with less alcohol (8%) offer the perception of sweetness. When the balance between the residual sugar and acidity is perfectly counterpoised, the wines have the inevitability of great art.
