This month, Royal Sonesta Houston is debuting a monthly chef’s table dining experience that spotlights stops on the global culinary path that brought Executive Chef Robert Graham to Houston. Capped at just 10 guests – the delectable journey begins on Saturday, July 27 at 7pm with a dip in Cabo San Lucas; where Graham was top toque at the private and ultra-excusive El Dorado Golf & Beach Club. The hotel’s TableOne – one of the only chef’s tables of its kind in the city – is the backdrop for the series, offering diners an intimate and interactive adventure in the heart of the bustling kitchen.

Menu highlights include: Hamachi Aguachile with cilantro and serrano peppers, Elotes with red chili peppers and mayonnaise, Charred Pulpo with squid ink aioli and salsa verde, Seafood Cocktail with salsa roja, Barbacoa Beef Cheek Tacos with cilantro, onion and charred salsa, Roasted Duck Breast and Crispy Pork Belly with chicharron, herbs and mole plus Tres Leches with sweet corn ice cream.

Following July’s menu, Chef Graham will focus on Floribian (a playful mix of Floridian and Caribbean) fare on Saturday, August 31; take guests to a New York state of mind on September 28 and bring it back to Texas on October 26.

“Our goal at TableOne is to create a fun, one-of-a-kind experience, and these tastings further enhance that front row seat by pushing the boundaries of the kitchen and the guest,” Chef Graham says. “Our motto is if you crave it, we’ll create it.”

A two decade hospitality veteran, Graham’s career has included executive chef positions at The Ritz-Carlton in Sarasota, Florida and prestigious Isleworth Country Club – recognized as one of the Top 100 Platinum Clubs of the World; The Club at The Bridges at Rancho Santa Fe, an exclusive golf course community just north of San Diego, California; The Ritz-Carlton, Phoenix in Arizona; and the Uptown Bistro in Frisco, CO. Graham formally began his career in the culinary arts at Long Island New York’s legendary Piping Rock Country Club, where he worked as a Chef Garde Manger and Sous Chef. His early training continued at landmark restaurants, including The Watermark in Sydney, Australia, and Manhattan’s Tavern on the Green, where Graham served under Master Chef John Johnstone as Executive Sous Chef. He attended Florida Culinary Institute in West Palm Beach, Florida International Fine Arts College in Miami and Regency Cooking School in Bali, Indonesia.
