CHEFS MARJORIE MEEK-BRADLEY AND MICHAEL RAFIDI ANNOUNCE ‘SAHTAYN,’ A DINNER EXPERIENCE PRESENTING INSPIRATIONS FROM A RECENT CULINARY EXPLORATION OF LEBANON ON 6/17
In April 2019, the Chefs of St. Anselm and Albi Spent Nine Days Exploring the Culinary Heritage and Culture of Lebanon. On June 17th, the Two Washington, D.C. Chefs Will Collaboratively Present Twelve Dishes Showcasing Techniques, Spices and Memories in St. Anselm’s Intimate Beefsteak Room.
Hiking through the Chouf Mountains, breaking bread in family homes, touring spice markets and cooking with local chefs in loved restaurants on a recent shared journey across Lebanon was a life-changing experience for Chef Marjorie Meek-Bradley (Executive Chef,St. Anselm) and Chef Michael Rafidi (Chef/Owner, Albi - opening this fall). The nine-day trip, led by a mutual friend and fellow chef, immersed the Chefs Meek-Bradley and Rafidi in Lebanon’s cuisine, from its modern presentations to its rich cultural roots. On June 17, 2019 at St. Anselm, the two chefs will showcase impactful inspirations from their trip at Sahtayn, a collaborative dinner presenting Lebanese spices, techniques and stories.
“One of my favorite things about Lebanese food is the focus on vegetables and brightness of the acidity used in the cuisine,” says Chef Marjorie. Sharing this focus, Sahtayn will be held in St. Anselm’s intimate Beefsteak Room and will feature a family-style presentation of (at least) twelve dishes, many of which feature spices the chefs personally scooped and ground in the spice markets of Lebanon.
