TASTING LIST

WHITE WINES
Vigneau-Chevreau, Vouvray Cuvee Silex 2017
As a fifth generation winemaker, Stéphane Vigneau-Chevreau took his family vineyards biodynamic in 1995 and restored the historic “Clos de Rougemont” vineyard in Vouvray’s Abbey of Marmoutier. Cuvée Silex is so-named for the flint (silex) in the vineyard soil which imparts a pleasing and distinctive minerality to this wine. It is dry (sec), and can be characterized by quince, apple, and ripe citrus fruit aromas and flavors. This wine ferments two months in barrels, then it matures in the tank with its fine lees until the spring. The wine develops a good balance between acidity and a light residual sugar which gives a natural fresh flavour.

Paul Kubler, Alsace, Pinot Blanc K 2015
Philippe Kubler (his Domaine, Paul Kubler, still bears the name of his father) is an intensely passionate, incredibly talented winemaker with a top-notch resume and, most importantly, top-notch wines. Beginning with the 2004 vintage, Philippe took over his family’s Domaine. Domaine Kubler is made up of only 9 hectares (about 22 acres) and the average age of the vines is over 30 years-old. He picks the grapes by hand and ages his wines in Alsatian oak foudres (big oak casks) for 8-10 months. The Kublers have been making wine here since 1620. Pinot Blanc is genetically related to Pinot Noir and produces a tasty medium bodied wine. Kubler's Pinot Blanc is loaded with lemons and other fruits with unmistakable minerality. You can even taste some spicy hints on the finish. Beautifully pure and dry it’s a wine that’s excellent to always have at the ready.

Testut, Chablis 1er Cru Montee de Tonnerre 2016
At the helm of his family domaine, Cyril Testut is one of the top winemakers in Chablis. The majority of the Testut vineyards are located in the old historical section of Chablis originally planted by the Cistercian monks. Powerful and complex. The Montee de Tonnerre is often quoted as the best 1er Crus in Chablis. Situated next to the Grand Crus it's superior exposition gives the wine consistency each and every year. Grapes for this wine are manually harvested. They are fermented in a tank in static setting for 24 to 48 hours. Aged minimum 16 months prior to bottling.

RED WINES
Clos Siguier 2015 - Red Cahors
Gilles Bley knows the history of Cahors and can trace his winegrowing roots in the AOC back many generations. His intimate understanding of the Malbec (Côt) and Tannat vines on his 15-hectare estate led to a desire to create wine that highlights this storied region’s unheard potential for delicacy. Cahors is divided into two distinct terroirs — this appellation is traditionally known for it’s heavy and brooding black wines that take years to reveal any fruit. These dark tannic wines come from the heavy soil down by the Lot River. Gilles Bley’s vines, by contrast, are on the lesser-known, better-drained terroir, up on the flat terraces above. His wines express the lighter and brighter side of Cahors. He produces wines that are surprisingly bright and fruit-driven with depth of red and black fruit, subtle terroir and silken tannins. The grapes are handpicked and de-stemmed. They undergo a 5 to 6 week process of maceration. Wild yeasts are used during fermentation. The wine rests in barrel before it is bottled unfiltered. Deep purple in the glass with an amethyst rim. Plum, cherry, and blackberry fruit with cool black tea notes dominate the nose. A fruit-driven palate follows and is backed by pounded stones. This medium-bodied red has great minerality, moderate acidity and finishes with silken tannins. Can be drunk young or aged. A versatile wine. ORGANIC

Baron Thenard Givry 1er Cru Clos St. Pierre 2015
Clos Saint-Pierre is a monopole of Domaine Thénard. The vineyard faces east and is higher up on the hill than the Cellier aux Moines and has a very red soil, rich in iron. After fermentation in large open top wooden fermenters, the wine is aged 50% in wooden foudres and 50% in used oak barrels. The Clos-Saint-Pierre tends to have a more tannic structure compared to the Cellier aux Moines and can age longer.

Domaine Eric de Suremain, Rully 1er Cru Preaux 2015
Suremain means “sure hand” in French and Eric de Suremain’s age-worthy Burgundies are proof of that. His vineyards and winemaking are biodynamic. This wine is beautiful, fruit-forward, elegant flavors of red berries with surprising length and a sweet, strawberry finish. His wines are long-lived and will drink well up to ten years or more. Eric de-stems 100% of his grapes. It undergoes natural yeast fermentation. This wine remains in barrel for as long as two years. ORGANIC
