Chef Sebastien Rondier is getting fired up about cherry blossom season by introducing his own Cherry Blossom Baked Alaska. Baked Alaska originally got its name from being the dessert created in honor of the newly acquired territory of Alaska, and while nobody is purchasing Alaska for the second time, historic Alexandria's Brabo Brasserie is proud to feature this fiery black forest and cherry ice cream Baked Alaska for the Cherry Blossom Festival. The following items will be available:
Chef Rondier’s special Cherry Blossom Baked Alaska features French-style glace (ice cream) of pureed cherries, atop a decadent black forest cake with chocolate ganache, additional fresh cherries and tangy kirsch mousse, topped with fresh-whipped meringue before being set afire tableside. $12.
For guests without a sweet-tooth, Chef Rondier has crafted a Rohan Duck Bigarade featuring duck roasted in pomegranate reductions and citrus and topped with cherry compote. Available April 1 through April 7.
For those looking for libations, we will feature the Sakura 75, a combination of Suntory Toki Whisky, Domaine De Canton Ginger Liqueur, yuzu (a Japanese citrus fruit), and Luxardo Syrup shaken and double-strained into a champagne flute to be topped with sparkling sake, a Luxardo cherry, and candied ginger Japanese flag.
