Located in the heel of Italy’s boot, Puglia melds the tranquility of the rustic Italian countryside with luxury and elegance in its culture and architecture. Despite its rich heritage, Puglia remains a haven and one of the least explored regions of Italy, offering a coastline bathed by two crystal blue seas: the Adriatic and the Ionian.

...Nothing is quite as Puglia as the 50 to 60 million olive trees....a carpet of olive trees...

This is the agricultural heartland of Italy, a land where Italy's oldest bread has been made in these wood fired ovens since medieval times, a land so ancient that it cradles the most outstanding example of a troglodyte settlement in the Mediterranean region and first inhabited zone dates back from the Palaeolithic era. The land of 'cucina povera' - the true birth of 'land to table' cuisine, orecchiette pasta, Trulli stone architecture and Primitivo wine.

The sun shines bright with such intensity, it glares down on this land for nearly 300 days a year!  With the heat and sun comes this region’s propensity for languid living, where time seems to slow down so we can appreciate every rich little detail of life under the Apulian sun.

Unforgettable Culinary Experiences

Garden to Table Cooking Class in a 900 year old Castle  with a state-of-the-art kitchen featuring hand picking vegetables and herbs in the garden before heading to the kitchen for our lesson. Chefs from all over the world including those in training at the Culinary Institute of America, gravitate here to learn all about Pugliese cuisine. Class is followed by lunch in the castle courtyard. 

Mozzarella, Pasta & Foccacia Cooking Class at a cooking school featured in the NY Times. We will twisting our very own mozzarella braids, make traditional handmade orecchiette pasta as well as foccacia.

Winery Tours & Tastings:
Puglia roughly divides itself into 3 main viticultural areas, Foggia in the north, Bari and Taranto in the middle and Brindisi and Lecce in the south. We will visit wineries featuring the full-blooded Pugliese grapes Negroamara & Primitivo as well as those featuring blends. These award-winning wines have been featured in Decanter and Wine Spectator. Our Winery visits will include winery tours, wine museum visits and tastings.

Olive Oil Farm Visit:
At the Masseria - rustic farmhouse that has been in the family for generations we will walk among olive trees so old that some have been around since the Roman times. In fact some specimens were cultivated by the ancient Messapi. We will also visit an ancient hypogeum mill used throughout the Middle Ages until the 1800's.

Traditional Salento Cheese Farm Visit:
This Masseria makes its cheese using traditional methods with milk from their own farms. Their cheeses are steeped in local history and full of flavors and aromas typical to this area, such as cheeses wrapped in grape leaves and cheese aged in volcanic ash to name a few.
Expert Guided Tours of Historical Sites
Our visits & walking tours through cities & UNESCO World Heritage Sites will be with subject matter experts such as architects, docents, art historians and artisans.
Michelin-star Restaurants to Rustic Dining 
True foodies are never snobs! We go where a great meal takes us!
We will be dining in covetted dining rooms of Relais & Chateaux & Michelin-star chefs, little hole-in-the-wall places and under the stars in rustic masserias. Uniquely Pugliese dining experiences await us like rosticceria butchers where we choose our meat and have it cooked there and then on a hot charcoal grill or in a wood-burning oven. While we wait, we relax and into a glass of wine!
