On Thursday, October 25, Liberty Station American Tavern and Smokehouse hosts Dominic and Amy Chappellet of Chappellet Winery in St. Helena, California for a winemakers’ dinner featuring a four-course menu specially crafted by Chef Anthony Apolinar with wines to complement each dish. Menu and Chappellet wine pairings include:
· 1st Course — Smoked Salmon Bruschetta with heirloom baby tomatoes and mango salsa paired with Chappellet Estate Chardonnay, Napa Valley
· 2nd Course — Lobster Risotto with herbed cheese complemented by Sonoma-Loeb Pinot Noir, Sonoma Coast
· 3rd Course — Smoked Pork Tenderloin with smoky mashed potatoes and brandy-raisin compote served with Chappellet Mountain Cuvee, Napa/Sonoma
· 4th Course — Baseball-Cut Filet with grilled asparagus, citrus quinoa and adobo demi-glace with Chappellet Signature Cabernet, Napa Valley
