Welcome to Ideal 55’s 2018 dinner series! We are off to a fresh start with an exciting Napa producer and a thrilling new venue. On February 28th, we are pleased to welcome William Cole Vineyards as our featured dinner series partner in the private room at 71 Above in downtown Los Angeles. Owner and winemaker William Ballentine will join us as we explore their limited production Chardonnay & Cabernet. With the opening of Ideal 55’s Wine Vault on Bunker Hill, we thought it was only fitting to host an event downtown!

William Cole Vineyards occupies an estate in St. Helena that has a unique and storied past in the Napa Valley. Building of the original estate commenced in 1869 and was completed in 1873. The stone building that William Cole occupies is the first stone wine cellar built in St. Helena. After years of production, Prohibition shuttered the building in 1920, where it sat vacant for years until being used as a private residence. Finally, after 80 + years and an extensive renovation and modernization, wine production began again in this historic building in 2004.

Having grown up on the property of Ballentine Vineyards in St. Helena, William (Bill) is the fourth generation in his family to make wine in the Napa Valley. With a degree in enology and viticulture and time spent as head winemaker at St. Clement Vineyards, it was only time before William founded his own boutique winery.

These wines are extremely limited in production and the grapes are grown almost exclusively on the five-acre estate in St. Helena. All production, bottling, and labeling takes place in the historic original stone building. There is no stringent schedule in their winemaking process, rather, William picks and blends based on taste and preference. Each distinct vineyard block of Cabernet is harvested, fermented, and barrel aged separately to isolate each of the lots and their individual characteristics. This allows for ultimate blending control, depth, and complexity in the finished wines. We’re thrilled to enjoy some new and back vintages of their lineup, and try their exclusive new release from Howell Mountain.
