It's been a few years since our last visit from the good folks at Champagne's Billecart-Salmon. So I can't think of a better time than the night before Valentine's Day (and Fat Tuesday for those tracking Lent) to renew our acquaintance with one of the world's greatest sparkling wine houses.
Billecart is one of France's benchmark family-owned wineries. Founded by Nicolas Francois Billecart and Elisabeth Salmon in 1818, today the family's 6th generation is at the helm with wines made by Francois Domi, cellar master for 30+ years. Despite the long history, this is hardly an estate standing pat on tradition, and recent years have seen them introduce some exciting new wines with zero dossage and showing a touch of wood.

Just a note for those unfamiliar with the brand - those last two wines are superior high-end, luxury, bottlings running $200+ for Cuvee Nicolas Francois and north of $450 for Les Clos Saint Hilaire. You'll get your money's worth from this class in more ways than one!
