The BCAE’s own Cajun Queen, Diane Manteca, will lead this culinary Mardi Gras parade through our kitchens getting you hands-on creating these New Orleans classics! After a glass of something, Diane might even show off her Zydeco dancing prowess!*

  • Jambalaya (Rice with Vegetables, Sausage, & Shrimp)
  • Gumbo (Louisiana Stew)
  • Étouffée (Cajun/Creole Seafood in Gravy with Rice)
