Join Billion Oyster Project for a chef collaboration dinner & conversation celebrating the history and future of New York Harbor — Presented by Familia Torres Winery.

6:30: Cocktails, Canapés, & Oysters
7:30: 4-course seafood dinner featuring prominent chefs from Billion Oyster Project's Shell Collection Program and wine pairings by Familia Torres.

This 90-guest event will showcase seafood currently or historically abundant in New York Harbor, but no longer sourced locally due to its current health. We will discuss the diverse reasons NY Harbor isn’t in peak health, the history and ecology of oysters in NY Harbor, how pollution has affected NY Harbor as a food system, and what NY Harbor might look like with billions of oysters and millions of people working together to restore its health.

We're pleased to host special guest speakers Mark Kurlansky, author of The Big Oyster: History on the Half Shell, and Miguel Torres Maczassek, 5th generation winemaker, discussing Familia Torres' initiative to bring back ancestral grape varieties.

“Bringing back ancestral varieties is an exercise in viticultural archaeology to recover part of our heritage" says Miguel Torres Maczassek. "By returning to the past and reviving varieties used by our ancestors, we can look to the future and find the kind of authenticity that will result in extraordinary wines that are truly special and cannot be made the same way anywhere else in the world.”

Featured chefs include Billy Oliva of Delmonico's Restaurant, Charlene Santiago of Canal Street Oysters, Corey Chow of Per Se, and Daniel Alvarez of Union Square Cafe. Each chef also participates in Billion Oyster Project's Shell Collection Program.
