Wine Vault & Bistro is pleased to announce our first ever winemaker dinner with Daou Vineyards. Katherine Daou, daughter of founder Daniel Daou, will be here in person to host this not-to-be-missed event.

If you're unfamiliar with Daou, here's a little background on both the winery and our host. Ten years ago, brothers George and Daniel Daou looked across California to find their ideal terroir for producing Cabernet Sauvignon, a quest that eventually led them to Daou Mountain in the Adelaida District of Paso Robles. Their vision is to make California "first growth" wine here, fulfilling the district's promise as one the world's next benchmarks for Bordeaux varieties.

The family moved to Paso Robles the summer Katherine started college. She saw the vines planted and watched the dream grow literally. Despite leaving for San Francisco to study fashion, she knew that she would someday return. After college she launched her own fashion line, daou denim co. but recently returned home to Daou Mountain where she plays an active roll in the family business.

COST
Cost for the complete dinner including all five courses and all five wines is $79.50 per person. Sales tax and an 18% gratuity will be added to the cost of all dinners. Due to limited seating, CREDIT CARD RESERVATIONS ARE AN ABSOLUTE MUST. We accept Visa and MasterCard only.

SPECIAL DIETARY NEEDS
Due to the complexity of this menu we regret that we will be unable to accommodate vegetarian requests. If you have any other special dietary needs, please let us know when you RSVP, not when you arrive. We will do our best to accommodate special dietary needs if we can and if given advance notice. Please be aware that last minute menu aberration requests without advance notice will be impossible for us to accommodate.

CANCELLATION POLICY
You may cancel your reservation up to 72 hours in advance without penalty. NO REFUNDS WILL BE ISSUED WITH LESS THAN 72-HOUR NOTICE unless we are able to replace your cancellation at the last minute. (See below for groups over 4 people.)

LARGE GROUPS (OVER 4)
If you want to come with a group of friends, please make one reservation for your entire party so we can reserve a block of seats for you ... however, in the interest of fairness to others, we reserve the right to limit the number of people on a single reservation at our discretion. The cancellation period for canceling the ENTIRE reservation without penalty is doubled from the standard 72 hours (see above) to 144 hours (6 days). If you need to cancel only 1 or 2 people, the standard 72-hour notice still applies.

WHEN
The dinners begin promptly at 5:00 on Sunday and 6:30 on Monday, but we HIGHLY, HIGHLY, HIGHLY recommend that you arrive earlier to better your chances of getting a closer parking space. The bar opens at 4:15 on Sunday and 5:45 on Monday if you'd like to mingle with the winemaker and enjoy an adult beverage before dinner.

WHERE
Wine Vault & Bistro is located in the heart of San Diego between Little Italy and Old Town at 3731-A India Street on the upper terrace. Follow the black handrail from the sidewalk up the stairs to our front door.

PARKING
Valet parking is available on Sunday only for $8.00. The drop-off point is two doors south of our entrance in front of Shakespeare Pub at the corner of India and Winder. On-street parking is also usually available within a 3-block radius. Remember that it’s OK to park in yellow commercial zones after 6:00 (or all day on Sunday) and that meters are also not enforced after 6:00 (or all day on Sunday). You can also park in the lot behind Shakespeare Pub two doors down, but do not park in El Indio's lot unless you want your car towed! If you can’t find parking next to the restaurant, there’s always LOTS OF PARKING on San Diego Avenue and the adjacent side streets just past the Chevron station across Washington Street. So please don't drive yourself crazy endlessly going around in circles waiting to pounce on that perfect spot when there's TONS OF PARKING less than three blocks away!

WINE QUANTITIES
We'll be pouring 3-5 ounce tasting portions of wine (see the line-up above) totaling 17 ounces plus 2 ounces of cream sherry, or the equivalent of well over three-quarters of a bottle of wine per person. Pour buckets are provided for designated drivers.

WINE SALES
Although some wines may be in limited quantities, all wines poured at this dinner will be available for purchase at the restaurant until sold out. We reserve the right to limit sales of any rare or allocated wines at our discretion.

WINE NOTES & BOTTLE PRICES
2017 Daou Chardonnay ~ $17
(Paso Robles) Winemaker's Notes: Floral and fragrant with a beautiful nose offering an abundance of pear and white peach aromas, fresh vanilla bean crème brulee, and star jasmine. Secondary layers reveal pineapple, papaya and crushed filberts, with nutmeg and lemon zest accents. Vibrant and zesty on the palate while maintaining its lush silkiness and voluptuous, mouth-filling texture. Bright tropical fruit flavors of mango, pineapple and kiwi, laced with hazelnut and honeysuckle, as well as subtle hints of banana cream pie. Clean and persistent on the finish, creamy and rich with Asian pear, citrus and vanilla, this delightful wine becomes a truly memorable experience.

2016 Daou "Pessimist" Red Blend ~ $21
(Paso Robles) Winemaker's Notes: 54% Petit Sirah, 27% Syrah + 19% Zinfandel. Intense red fruit aromas of cherry, raspberry and rhubarb are complemented by an undercurrent of blue and black fruits; blueberry, blackberry and plum. Accompanying them are mushroom and allspice notes, accented with chocolate and hints of toffee and vanilla. Bright and vibrant on the palate, flavors of cherry, cranberry and pomegranate dance on the tongue. A silky texture coupled with a lovely cinnamon spiciness produces a memorable, mouthwatering sensorial experience. Multilayered and complex, with an extraordinary combination of harmonious flavors and aromas, this wine delivers in exquisite fashion, and the finish is long enough for one to ponder the depth and complexity of the sensations the wine offers.

2016 Daou Cabernet Sauvignon ~ $22
(Paso Robles) Winemaker's Notes: Blackberry, cassis, plum and currant aromas greet the nose, surrounded by black olives, anise, leather and cigar box. Notes of graphite and crushed stone mingle with just a hint of cool mint. Robust and full bodied, an undercurrent of restrained power is palpable just below the surface at the core of this wine. Firm, fine grained tannins provide ample backbone for the layers of boysenberry, black cherry, licorice and dried herb flavors. Meaty and fleshy while retaining an overall elegance, it finishes with authority and finesse.

2016 Daou "Reserve" Cabernet Sauvignon ~ $45
(Paso Robles) Winemaker's Notes: From one of the greatest vintages Paso Robles has seen comes this captivating and impressive Cabernet Sauvignon. The bouquet is a profusion of black cherry and Oregon blackberry aromas, laced with cigar box, desert sage and peppermint. A multitude of layers unfold revealing blueberry, cassis, leather, black plum and crushed stone with highlights of wild mushroom, bay leaf and white pepper. Voluptuous and voluminous on the palate, the formidable fruit is accentuated with earthy undertones. The marvelous mouthfeel with firm, mature tannins results in a weighty yet velvety texture that gently surrenders to an elegant, powerful finish.

2015 Daou "Soul of a Lion" Cabernet Sauvignon ~ $125
(Paso Robles) Winemaker's Notes: 76 % Cabernet Sauvignon, 13% Cabernet Franc + 11% Petit Verdot. A beautifully concentrated wine accompanied by tremendous elegance that incorporates some old world flavors due to the vintage’s characteristics. Endowed with beautiful purity and texture, it has all the standard classic Cabernet Sauvignon flavors that include graphite, lead pencil shavings, blackcurrants and ash. The higher percentage of Cabernet Franc in this vintage gives it a beautiful aroma and an additional elegant component that rounds it up for a very long finish. Drinking surprising well today, we expect it to shut down shortly for a few years just to be re-awakened for long term cellaring.

NV Williams & Humbert “Canasta” Cream Sherry ~ $22
(Spain) Winemaker's Notes: Figs and raisins, with nice hints of dark chocolate and vanilla. Hints of Gianduja, walnut cake, and slight peppery notes of a dry Oloroso, with a faint smoky note. Smooth and attractive, good start. The attack feels soft, picking up strength over time. Caramel sweets with nice crème brûlée notes. Hazelnuts again. Fades on Turkish coffee with a dark cocoa bitter touch. It does not feel sticky or overwhelmingly sweet – at its core you feel a good Oloroso.

Due to fluctuations of supply, we reserve the right to make substitutions of equal or greater value in case any of the wines or foods become unavailable. Please, ABSOLUTELY POSITIVELY NO ONE UNDER THE AGE OF 21 ... even if your babysitter flakes out on you at the last minute!
