Cost: $27.50 3-Course Prix Fixe Dinner + $15 Wine Pairing

Please join us (21 and up only, please) this Thursday anytime from 5:30 on for an opportunity to sample three high-end Pinot Noirs. We're starting with the Belle Glos Pinot, followed by the Journeyman and Croix Pinots. The flight of all three wines is a ridiculously low sixteen bucks. Wine notes and bottle prices are at the end of this announcement if you're interested.

In addition to the regular twenty-seven-fifty 3-course prix fixe bistro menu (which includes vegetarian options), we're also featuring a burning cedar plank salmon special for two (also twenty-seven-fifty per person) that pairs with the wines. This is an amazing way to prepare salmon if you've not had it this way before. The chef starts by heating a cedar plank to the smoking point and then immediately places a large salmon fillet directly on it. Everything is then put in the oven where the still smoldering plank simultaneously imparts a delicious smoky flavor while the oven's heat finishes the cooking. Yum! The salmon is then served piping hot on its own individual plank for two to share. While we can't split the salmon if only one person in your party wants this special, we can provide doggie bags. Here's the menu special line-up:

First Course
Roasted Mushroom Bruschetta | Smoked Pork Loin | Herbed Buratta
(to enjoy with the Belle Glos Pinot Noir)

Second Course
Cedar Plank Wild Salmon | Truffle Potato Mousseline | Braised Kale | Crispy Pork Belly | Smokey Demi Glacé
(to enjoy with the Journeyman and Croix Pinots)

Third Course
White Chocolate Panna Cotta | Strawberries | Honey Comb Brittle
(to enjoy by itself or with a glass of Torres Spanish Orange Brandy Liquer)

Here's the wine line-up:

PINOT NOIR WINE FLIGHT (3 oz. pours): $16

2016 Journeyman Pinot Noir
2016 Croix "Narrow Gauge" Pinot Noir

SO YOU DON'T LIKE THESE WINES, EH?
In addition to the featured wine flight, we'll also have these and other wines available by the glass or bottle, as well as the usual pairing flight. We also have a full bar with lots of premium libations and attitude adjusters.

SO YOU DON'T LIKE THE DINNER SPECIAL, EH?
In addition to the special mentioned above, we'll also have several other 3-course menus (including vegetarian options) available. The bistro menu changes every week but you can get an example of a typical one by visiting our website, clicking on the calendar link and then clicking on a recent Friday.

LOCATION & PHONE
Wine Vault & Bistro is located in the heart of San Diego between Little Italy and Old Town at 3731-A India Street on the upstairs terrace. Follow the black handrail up the stairs from the sidewalk to our front door. Our phone number is (619) 295-3939.

PARKING ~ FREE & PAID
Valet parking is available for $8.00. The drop-off point is two doors south of our entrance in front of Shakespeare Pub at the corner of India and Winder. On-street parking is also usually available within a 3-block radius. Remember that it’s OK to park in yellow commercial zones after 6:00 and that meters are also free after 6:00. You can also park in the lot behind Shakespeare Pub two doors down, but do not park in El Indio's lot unless you want your car towed! If you can’t find parking next to the restaurant, there’s always LOTS OF PARKING on San Diego Avenue and the adjacent side streets just past the Chevron station across Washington Street. So please don't drive yourself crazy endlessly going around in circles waiting to pounce on that perfect spot when there's TONS OF PARKING less than three blocks away!

WINE NOTES & BOTTLE PRICES
2016 Belle Glos "Las Alturas" Pinot Noir ~ $38
(Saint Lucia Highlands) Winemaker Notes: Deep ruby red in color with intriguing aromas of sun-warmed blackberries, ripe plums and hints of black licorice. A complexity of dark berry fruits unfolds on the palate, with flavors of blackberry, Bing cherry and dark chocolate predominating. Vanilla and cedar oak undertones on the mid-palate further enhance the wine. The overall impression is rich with refined tannins, firm acidity and explosive layers of ripe fruit.

2016 Journeyman Pinot Noir ~ $54
(Russian River Valley) Winemaker's Notes: Fresh black cherry, currant, and red raspberry flavors, layered with snappy but softened tannins, rich earthiness, and a long finish.

2016 Croix "Narrow Gauge" Pinot Noir ~ $44
(Russian River Valley) Winemaker's Notes: A fuller, broader and savory style of Pinot Noir, the nose opens with aromatic concentrations of sweet tobacco, rose water, black cherries and allspice. The palate is exotic, expansive, yet focused with tongue curling acidity and a savory glide that finishes with substantial length on the palate. The body is surprisingly full without overwhelming the tasting experience. This is pure enjoyment. Bravo! Anticipated maturity: 2019 to 2025.
