Wine Vault & Bistro is pleased to announce our first ever winemaker dinner with Neyers Vineyards. Winemaker Tadeo Borchardt will be here in person to host this not-to-be-missed event. Begun in 1992 by Bruce and Barbara Neyers, Neyers Vineyards produces about 15,000 cases of wine annually. Neyers Vineyards sits in the heart of the Napa Valley, but Bruce's relationship with French wine importer Kermit Lynch has made a huge influence on his wines. Many of Kermit Lynch's French producers that Bruce has come to know farm organically, make their wines naturally without use of cultured yeast or laboratory designed malo-lactic starters, and bottle their wines without fining or filtration ... practices that Bruce utilizes in his winery.

A San Francisco Chronicle "Winemaker to Watch," Tadeo Borchardt joined Neyers Vineyards over ten years ago after several years of making wine in both California and New Zealand. He's a zealous advocate of natural winemaking practices and an enthusiastic supporter of Neyers' appreciation for traditionally produced European-style wines. Tadeo brings a valuable combination of technical know-how and respect for tradition to the team.

COST
Cost for the complete dinner including all five courses and all four wines is $69.50 per person. Sales tax and an 18% gratuity will be added to the cost of all dinners. Due to limited seating, CREDIT CARD RESERVATIONS ARE AN ABSOLUTE MUST. We accept Visa and MasterCard only.

SPECIAL DIETARY NEEDS
Due to the complexity of this menu we regret that we will be unable to accommodate vegetarian requests. If you have any other special dietary needs, please let us know when you RSVP, not when you arrive. We will do our best to accommodate special dietary needs if we can and if given advance notice. Please be aware that last minute menu aberration requests without advance notice will be impossible for us to accommodate.

CANCELLATION POLICY
You may cancel your reservation up to 72 hours in advance without penalty. NO REFUNDS WILL BE ISSUED WITH LESS THAN 72-HOUR NOTICE unless we are able to replace your cancellation at the last minute. (See below for groups over 4 people.)

LARGE GROUPS (OVER 4)
If you want to come with a group of friends, please make one reservation for your entire party so we can reserve a block of seats for you ... however, in the interest of fairness to others, we reserve the right to limit the number of people on a single reservation at our discretion. The cancellation period for canceling the ENTIRE reservation without penalty is doubled from the standard 72 hours (see above) to 144 hours (6 days). If you need to cancel only 1 or 2 people, the standard 72-hour notice still applies.

WHEN
The dinners begin promptly at 5:00, but we HIGHLY, HIGHLY, HIGHLY recommend that you arrive earlier to better your chances of getting a closer parking space. The bar opens at 4:15 if you'd like to mingle with the winemaker and enjoy an adult beverage before dinner.

WHERE
Wine Vault & Bistro is located in the heart of San Diego between Little Italy and Old Town at 3731-A India Street on the upper terrace. Follow the black handrail from the sidewalk up the stairs to our front door.

PARKING
Valet parking is available for $8.00. The drop-off point is two doors south of our entrance in front of Shakespeare Pub at the corner of India and Winder. On-street parking is also usually available within a 3-block radius. Remember that it’s OK to park in yellow commercial zones on Sunday and that meters are also not enforced on Sunday. You can also park in the lot behind Shakespeare Pub two doors down, but do not park in El Indio's lot unless you want your car towed! If you can’t find parking next to the restaurant, there’s always LOTS OF PARKING on San Diego Avenue and the adjacent side streets just past the Chevron station across Washington Street. So please don't drive yourself crazy endlessly going around in circles waiting to pounce on that perfect spot when there's TONS OF PARKING less than three blocks away!

WINE QUANTITIES
We'll be pouring 3-5 ounce tasting portions of wine (see the line-up above) totaling 16 ounces plus 2 ounces of our legendary "Irish Coffee without the Coffee," or the equivalent of well over three-quarters of a bottle of wine per person. Pour buckets are provided for designated drivers.

WINE SALES
Although some wines may be in limited quantities, all wines poured at this dinner will be available for purchase at the restaurant until sold out. We reserve the right to limit sales of any rare or allocated wines at our discretion.

WINE NOTES & BOTTLE PRICES
2015 Neyers "Carneros District" Chardonnay ~ $23
(Carneros) Winemaker's Notes: This youthful wine comes out of the gate hugely concentrated and big in reduced aromas of oak. Voluptuously lush in dense flavors of crème brûlée, it finds a balance midpalate, buoyed by juicy citrus-backed acidity. The result is smooth, luscious, and enormously attractive, aged in a mixture of new and used French oak barrels. This Carneros District Chardonnay comes from “Shot-Wente selection” grapes grown on three vineyards. “Shot-Wente” is an heirloom Chardonnay selection. It developed naturally in the Wente Brothers Livermore Valley vine nursery in the early 1930’s. The clusters are smaller than normal for Chardonnay as are the individual grapes giving them increased skin surface relative to the juice. That enhanced ratio makes the wine especially flavorful, so despite the small yields the selection was popular with California winemakers in the 50’s, 60’s, and 70’s. It is now making a comeback in popularity, as it has shown a resistance to several new diseases that afflict vines that were developed through clonal breeding.

2016 Neyers "Placida" Pinot Noir ~ $36
(Russian River Valley) Winemaker's Notes: Comes from a small parcel of vines Chuy Ordaz planted in the Gold Ridge Clay of his Russian River Valley ranch, using cuttings from this original Joe Swan parcel. We hand harvest the fruit, then sort the berries while removing only 50% of the stems. We ferment in open top tanks using native wild yeast and punch down the cap manually several times daily. The wine is subsequently aged for one year in 60-gallon French oak barrels before being bottled unfined and unfiltered. The color is dark ruby and the aroma combines exotic jams and spices with earth and mineral. The texture is as satisfying as the flavor, and the finish shows you a winemaker at the top of his game.

2016 Neyers "Left Bank Red" ~ $31
(Napa Valley) Review by Wine Enthusiast ~ 90 points: A 50/50 blend of Merlot and Cabernet Sauvignon, this wine is robust in cedar, dried herb and peppercorn aromas. Thick extracted layers of grippy texture are highlighted in blueberry and dark chocolate. The restrained flavors provide a sensational taste experience that is neither overwhelming, nor lavish with great balance, minerality, and elegance.

2015 Neyers "Neyers Ranch" Cabernet Sauvignon ~ $46
(Napa Valley) Review by Wine Enthusiast ~ 90 points: This wine has a rich, dark color coupled with a vibrant fruit aroma, and as frequently occurs in low yield vintages, a comforting softness that makes it immediately attractive. From the producer's home site, this wine opens with a tobacco-laden nose, leading to a palate with moderate structure and plenty of grip. Savory in character, this is defined by tones of dried herb, cassis and toasted oak.
