Cost: $85 per person, plus an 18 percent gratuity

Newton Vineyard, the venerable St. Helena winery, will host a five-course dinner and wine pairing at 7:30 p.m., Thursday, September 27, in the underground wine cave at Pala Casino Spa & Resort.  Doors will open at 7 p.m.  Reservations, $85 per person plus an 18 percent gratuity, may be made by calling 1-877-946-7252.  Guests should ask to "book the Newton wine dinner."  The first course will be Lobster Bisque, baked with a buttery pastry crust, paired with a Red Label Chardonnay Sonoma County.  The second course will offer Roasted Filet of Chilean Sea Bass with Wasabe Potatoes, Ginger Sauce and Steamed Clams with an Unfiltered Chardonnay Napa Valley.  Course three will be Wood Smoked Duck Muscovy Breast with Oregon Cherries, Port Syrup and Red Label Claret.  The fourth course will feature Seared Prime Filet Mignon with Wild Mushrooms and Red Wine Reduction with Unfiltered Cabernet Sauvignon.  Dessert will be Banana Cake with Creme Anglaise and Chocolate and a Blue Angel with Domaine Chandon & Blue Curacao.  Newton Vineyard was one of the first wineries onSpring Mountain, a rugged yet serene appellation located west of the eastern flank of the Mayacamas Range.  Newton Vineyard was established by Dr. Su Hua and Peter Newton, whose trailblazing vision transformed the hillside into a 540-acre estate with 120 acres of planted vines.  Newton's approach to winemaking is meticulous, using techniques based on the old-world style including natural fermentation and bottling without filtration.  The grapes are handled with care, hand-picked in small lots and transferred to the cellar for gentle pressing.  The winery is custom-designed to allow lots from 112 distinct parcels on the property to ferment separately, offering the winemaker an abundance of options when constructing final blends.  Barrell aging takes place in a cave built into the mountain directly beneath the winery and its iconic gardens.
