For the Scotch lovers, we will be featuring a wide variety from one of the best known independent bottlers – Signatory. What makes these scotches so unique is their triple single approach:
Single Distillery - Signatory, as an independent bottler, is able to source a few casks from distilleries throughout Scotland, bottle them under the Signatory label, and then offer to the market these single malts that are otherwise found only in blends.
Single Distillation - Signatory selects particular distillations or batches from the independent distilleries.
Single Cask - Signatory tastes every barrel and selects only the finest casks within each batch and bottles only one cask at a time.
Every bottle of Signatory has characteristics that resemble the unique flavor, color and age profile of a single cask. Every bottle of Signatory Scotch can be identified by the following: date of distillation, date of bottling, cask and bottle number.

For our Bourbon and Rye fanatics, we have a special treat from Chicago's first distillery since the mid-1800s – Koval Distillery. Rarely do we taste through a line of American whiskies from a single distillery and fall immediately in love with all of them. In addition to their bourbon and rye, which are delicious, Koval also makes a 100 % Millet Single Barrel and a 100% Oat Single Barrel. In the modern whiskey boom it is hard enough to find one great value let alone four from a single producer that are as tasty as they are unique.

One of our favorite choices would have to be the La Rioja Alta Rioja Ardanza Reserva, which is arguably one of the greatest values in wine and the critics agree. From Robert Parker’s Wine Advocate (93 points) to James Suckling (94 points) and Decanter (95 points) – everyone that tastes this wine will fall in love with it. For Zachys, this is one of the more generous and silky textured Ardanza Reservas we have tasted since its birth in 1942.
