A Story of Champagne The story of BILLECART-SALMON Champagne began in the early 19th century, in the village of Mareuil-sur-Aÿ, near Epernay. It was here in 1818, that husband and wife, Nicolas François Billecart and Elisabeth Salmon, both in love with the same terroir decided to found their own Champagne House. Century after century, harvest after harvest, a long story has been written. “Give priority to quality, strive for excellence”, a motto handed down from generation to generation. Today, the Billecart family has remained loyal to Mareuil-sur-Aÿ with the sixth generation now at the helm of the House, represented by Mathieu Roland-Billecart.

Wines to be tasted:

BRUT RÉSERVE - Harmony and Balance 

The Brut Réserve is a round, harmonious and balanced wine. Its blend is made with Pinot Noir, Chardonnay and Pinot Meunier, sourced from the best sites in the Champagne region. A perfect aperitif or accompaniment for all occasions.

EXTRA BRUT RÉSERVE - Pure and Natural

A new definition of a refined style, this cuvée is made with Pinot Noir, Pinot Meunier and Chardonnay with no sugar added to the dosage. A tactile and harmonious palate is finished with a delicious minerality. A surprising association with the finest dishes (veal carpaccio, scallops a la plancha and marinated raw fish with citrus fruits).

BRUT ROSÉ - Romantic Champagne

The production secrets and the vinification method of this cuvée go back to the origins of the House of BILLECART-SALMON. The Brut Rosé is a blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as red wine. For dessert, it will add a sublime touch to red fruit flavours.

CUVÉE BRUT SOUS BOIS - Captivating and Original,

a New Revelation The House of BILLECART-SALMON is renewing the spirit and “savoir-faire” of the original champagnes with this new cuvée, composed of a third of each champenois grape variety. Unique and vinified entirely in oak, this champagne unveils a radiant yellow crystalline appearance with golden reflections.

 ViINTAGE 2007 - Intense and attractive
 70% pinot noir and 30% chardonnay, a small parcel (10%) has seen old wood. A complex Champagne, the nose starts out with polished, toasted woody aromas, and hints of fresh mushroom, too. The palate delivers smooth lemon and peach fruits amid layers of spicy fresh field mushroom. Quite savory, dried lemon peel finish.
