OK, so this is going to sound pretty self-evident, but whatever you put into the soil is going to come out again at some point. Organic wines are all about taking full control of what goes into the bottle: nothing gets in there that the winemaker doesn't know about. Biodynamic winemaking goes even further - more than just a stringent organic process, it's half science, half magic, all fascinating and all controversial.
