FIRST COURSE SLOW COOKED WILD BOAR BOLOGNAISE

Typically of our vineyards, it makes an elegant floral wine rather than a big in your face style. From the previous vintage we started to introduce a small amount of co-fermented Viognier and Roussanne. Although co-fermenting Roussanne is not very common, it is allowed in Hermitage and adds a finely textured tannin as well as some exotic perfume notes.

A balance between the richness and perfume of the roussanne and viognier and the fruit and freshness of the chenin and verdelho. 2016 has a very tight structure with a good acidity.

“Remarkably consistent from vintage to vintage, Three Pines is always among the best Cabernets in the Cape, showing the deep colour, structure and intensity of the cooler, wetter Jonkershoek Valley. This is a stony, focused red with tannic support from 5% Petit Verdot and texture from 2% Merlot. A wine that ages well. Drink: 2017-25” - Tim Atkin 95 points
