Spain’s first bottle of sparkling wine was created in 1872 using the Champagne method in the Catalonia region and named after the stone cellars (cavas) in which the wine is matured. Cava goes through the traditional method of secondary fermentation in the bottle to get its bubbles. It can be white or rosé and is usually a blend of Xarel-lo, Macabéo, and Parellada grapes. Sherry captures you with its intense aromatics and electrifying acidity. You never smelled anything like this stuff. Sherry is often misunderstood and misrepresented. 3,000 years of history have given it its own identity.
Though Cava and Jerez are in two opposite areas of Spain, they have more in common than you would think: acidity, calcareous soils, the importance of yeast, unique aging methods, blend of vintages and a range of styles.
