Enjoy a special treat and come to our winery for a fabulous five-course winemaker dinner prepared by Chef Matt Collier. Matt is part of the Boulder County farmers’ market community and sources all of his ingredients right here in Boulder County! You enjoy the food and wine sitting amongst the barrels and we provide the entertainment and do the dishes. This is an experience not to be missed and a great way to spoil Mom! 1 . All the Flowers (edible flowers) with local greens, shaved fennel, radish, watermelon vinaigrette and dried carrots – paired with Riesling 2017
2. Smoked apple cider trout with Yukon gold puree, English peas, fava beans, baby carrots and basil beurre blanc – paired with Friday’s Folly White
3. Burrata, hakuri turnips, pickled shallots, spiced walnuts, arugula and luxardo-Ensemble gastrique – paired with Ensemble 2015
4. NY Strip, spring onion soubise, spinach, asparagus, new potatoes with chive chimichurri and microgreens – paired with Malbec 2016
4. Passion fruit sponge cake with warm chocolate ganache, chantilly, raspberries and candied beet crumble – paired with Encore 2016
