Join us for an evening of exceptional Calistoga wines!

   

Please join Chef Erin Sealy at her Orange County pop-up dinner location, Salt Creek Wine Co. in Laguna Niguel, for an unforgettable evening. We'll be pouring 5 wines from Calistoga's JAX Vineyards! Jenny Moore will be joining us from the winery to present these classic Napa Valley varietals and chat about winemaking at a boutique winery like JAX Vineyards. Chef Erin will be pairing each of the 5 wines with their own dinner course.

Each selection will be paired with its own wine inspired dinner course, prepared by Chef Erin Sealy. Chef Erin specializes in pairing food with wine, with a slightly different approach than most. Prior to creating a menu, each wine is tasted and reviewed and then she creates a food pairing, highlighting the nuances of each wine. This concept creates a dinner and pairing experience with layers of complexity and unique creations which exemplify the enjoyment of each wine. With a passion for food and wine, Chef Erin delights attendees with a detailed account of the pairing concept and cooking techniques that create each course. Expect a fabulous evening of wine, food & educational insights!

Puff Pastry Cup Filled with Baked Meyer Lemon Goat Cheese and Topped with Fresh Chimichurri, Toasted Pine Nut and Dried Cranberry

 

2015 JAX Y3 Napa Valley Chardonnay

House Butternut Squash + Romano Gnocchi in Brown Butter Sauce with Roasted Chestnut, Fresh Pomegranate and Flash Fried Sage

 

2015 JAX Y3 Russian River Valley Pinot Noir

Tri Potato Tortilla Espanola: Olive Oil Poached Potatoes with Egg, Smoked Mozzarella, Gruyere, Fresh Sage and Sicilian Chicken Sausage. Served on Baby Greens, Topped with House Sofrito Sauce and Cotija Crumble

Chef Erin's Wine Inspired Lasagna: Spicy Arrabiata Layered with Spicy Pork Sausage, Rosemary Ground Lamb & Black Pepper Ground Sirloin, Baking Spice Ricotta, Fresh Spinach & Portobello. On Chopped Spinach and Topped with Asiago + Romano

Chef Erin's Shi Shi Taco with Wine Braised Tri-Tip, Nutmeg Infused Brie Cream, Thyme + Fig Sautéed Mushroom, Baby Arugula & Crispy Parsnip in Green Chile Flour + Corn Tortilla
