Pala Casino Spa & Resort will host a Champagne Celebration, a five-course dinner and champagne pairing, to celebrate the holidays at 7:30 p.m., Thursday, December 21, in its underground wine cave. The first course will be Roasted Oysters with Smoked Salmon Crust, Chives, Lemon Hollandaise and Caviar paired with a Domaine Chandon Etoile Rose. The cecond course will offer Carpaccio of Octopus with Potato Peppers and Beans with a Moet Chandon Imperial followed by Chestnut Fettuccini, Creamy Wild Mushrooms and Parmesan paired with a Veuve Clicquot Yellow Label. The fourth course will offer Beef Tenderloin with Lobster Medallion, Truffle Peppercorn Sauce and Winter Squash paired with Ruinart Blanc de Blanc. Dessert will be Chef Albert Cruz' Christmas Trio of Glenmorangie Single Malt Scotch Whiskey with The Lasanta, Nectar D'Oro and The Quinta Ruban.
