BookCliff Vineyards has partnered with Chef Matt Collier from Seeds Cafe to present a Holiday Dinner that treats your senses with great wine and food. Matt sources all of the ingredients from Boulder County farms and manages to find fresh greens in the winter. Come and pamper yourself during the holiday season, "Celebrate the Local" with us, and enjoy the fresh flavors and the fabulous pairings with Bookcliff wines for a very special dining experience accompanied by a live harpist to entertain.
1. Local greens salad with watermelon vinaigrette, fennel-yellow beet puree, coriander roasted carrots, radish, red onion and corn meal crusted fried buttercup cheese – paired with 2016 Chardonnay
2. Braised pork belly with beet spaetzle, pickled Anaheim’s, carmelized onions, spiced pumpkin seeds and cumin white wine gastrique – paired with 2015 Cabernet Franc Reserve
3. Dried bean and quinoa falafel with winter squash puree, salsa verde and fried garlic – paired with 2015 Merlot
4.Slow roasted lamb shoulder with sweet potato pave, braised red cabbage, hakuri turnip salad and thyme jus – paired with 2015 Petit Verdot
5. Aspen Moon carrot cake with plum coulis, candied beet chips and whipped honey crème fraiche – paired with 2016 Riesling
