Trefethen Family Vineyards, the award-winning Napa, CA, winery, will host a five-course dinner and wine pairing at 8 p.m., Thursday, May 25, in the underground wine cave at Pala Casino Spa & Resort. The first course will be Goat Cheese in Filo with Peekytoe Crab, Cracked Pepper, Dill and Red Pepper paired with a Trefethen Dry Riesling. The second course will offer Bacon Wrapped Diver Scallops, Jalapeno Mango Chutney and Micro Greens with a Chardonnay followed by Seared Lamb Loin , Wild Mushroom Risotto and Tempura Sage paired with a Merlot. The fourth course will offer Tournedos of Beef Tenderloin, Foie Gras, Red Onion Jam, Potato Parsnip Pancakes and Red Wine Reduction paired with Cabernet Franc. Dessert will be Chocolate in Paradise and Cabernet Sauvignon. Trefethen Family Vineyards was founded in 1968 by John and Janet Trefethen. In addition to its many national awards, in 1988, the U.S. Department of the Interioir placed its winery on the National Register of Historic Places as the only wooden, gravity-flow winery in Napa, County, CA.
