At Astor, as the nights turn cool and crisp our thoughts naturally turn to crackling juicy, pork and deliciously complex Riesling: our very own Oktoberfest! Kick back and relax in this demonstration class as we taste our way through some of the most delicious dishes in the Oktoberfest menu. Chef Michael Krondl will be our guide, sharing cooking tips, techniques and culinary insight as he prepares dishes for you to enjoy.
Our pork and wine celebration begins with a how-to on pretzel making. Naturally our pretzels come studded with flecks of smoky speck! Then come miniature potato pancakes, fried in pork fat of course, and served with heirloom apple sauce. The roast, a succulent suckling pig, will be served alongside classic Bavarian pretzel dumplings and Riesling-infused sauerkraut. And for dessert, Chef Michael Krondl will demonstrate a plum tart with streusel that even his großmutter would envy.
And let’s not forget the Riesling! A resident Sommelier will pair each dish with wine, as they walk us through all styles of German Riesling, from piercingly acidic to lusciously sweet, and everything in between. You’ll leave with an arsenal of culinary techniques and wine pairing know-how, and very very full.
