When most of us think of Chartreuse we think of a spirit more suited to colder weather and sitting in front of a fire rather than a lawn-chair in the sun. Always served ice-cold we thought a pairing with a casual cookout feel would help us highlight lighter applications for this storied spirit.

first course:
Chartreuse Cured Gravlax
cool salmon is the perfect foil for the summer heat and we'll be pairing it with an herbaceous concoction guaranteed to contain it's perfect mate: pim's no. 1 cup.
second course:
"Clam Bake"
note the quotes. this won't be what you expect, neither will the cocktail.
third course:
Pork Tenderloin - caramelized fennel, roasted peaches, thyme
pig, herbs, fruit. that could be a top three list as easy as it could be a recipe. one of our favorite new cocktails will accompany.
sweet:
white chocolate semi-freddo
paired with Green & Yellow Chartreuse VEP.
