This is a first for Khoury's Fine Wine & Spirits, for the wine tasting event this week we will be focusing on wine based apertifs from both France and Italy.  Our friend Ken from Pacific Edge, will be educating and tasting us on these unique products.

Most, though not all, aperitifs are wine-based and range from sweet to bitter. Their variety is impressive, but they all do the same thing: prime the palate.  Some of the most famous and well known are Campari and Lillet, but to make this tasting truly unique we chose to feature a few brands not well known in the U.S. yet, but are legends in their home countries, such as Cocchi Americano, the original "americano" aperitif (since 1891), made of white moscato wine from Piedmont infused with herbs and spices.

Dolin Vermouth

Dolin Vermouths are notably lighter, drier and less pungent than their larger commercial counterparts. The particular mixture of plants found near Chambéry give a fresh, restrained and elegant nose, with a subtle, complex bittersweet palate. Even the Blanc and Rouge retain great balance, with the sugar never cloying, and just enough bitterness to whet the appetite. Each can be enjoyed as aperitif on ice, with a twist of citrus, or in a broad array of traditional cocktails.

Cocchi Barolo Cocchi

Barolo Chinato is a special wine produced with Barolo DOCG (Denomination of Controlled and Guaranteed Origin), spiced with China Calissaja barks, gentian and rhubarb roots, and valuable cardamon seeds – the active principles are extracted through a slow maceration process at room temperature, then refinement occurs in casks for nearly one year.

Americano Cocchi Aperitivo

This wine-based aperitif does what so few purported aperitif's seem to do: it enlivens your palate and your appetite. What a concept! This is the original Americano, produced without a break in the Piedmontese town of Asti since 1891 and made according to an entirely natural recipe, which includes white wine aromatized with many herbs and spices, and no artificial coloring, flavoring or additive of any kind. It is produced in limited quantities and matured for a year before being put on sale. Serve chilled in a tumbler or in an appropriate glass with a twist of orange peel and if desired, ice cubes. A splash of soda is indispensable to make the full aroma and perfume come out at their best.

Cocchi Vermouth di Torino

To celebrate its 120th anniversary, the House of Cocchi has resumed production of its original recipe for Vermouth di Torino, first offered in 1891. Produced in the historic Asti region outside of Torino, this Moscato-based vermouth is a true Vermouth di Torino - one of the only two protected geographical indication of origins for vermouth. The rich, vibrant flavor profile offers complex notes backed by a balanced bitter undertone. Enjoy neat or mixed in numerous classic cocktails.
