Tuscan food can be a real revelation, with each town in the region producing its own special dishes. For this dinner, which will be matched by fine Italian wines, we present one the best, yet rarely seen, dishes: Cacciucco, a superior 'fish stew' for want of a better word, from the coastal town of Livorno. According to legend, a fisherman's widow with five children knocked on five houses for food and received five different types of fish. She threw it all in a pot and Cacciucco, spelt with five 'C's' was born. We also present Quail Salad with Raspberry Vinegar, spinach and wild mushroom to start and a moist torta of very fine chocolate for dessert. The wines are specifically chosen to accompany this Tuscan feast, with Prosecco Gorio Malibran to start, a white Grillo Parlante Fondo Antico 2010 for the starter, a Morellino di Scansano for the Cacciucco and a most unusual Respiro di Vigna Carussin 2007, a sweet red for dessert.
