The Great American Wine and Food Revolution Over the last 30+ years, the U.S. has moved from a soda pop and martini society to a wine culture, with Americans who report they drink wine increasing from 43% to 57%. With the proliferation of ethnic cuisine and cross-cultural combinations, like Mexican/Korean or Japanese/French, and unusual "gastro-fusion" dishes that have found their way into the mainstream, an exciting new era of wine/food pairing has heightened the need for properly trained service staff.
