Savor an Italian influenced four-course meal in the heart of Sonoma wine country.  The menu celebrates the American Mulefoot Hog - one of the rarest heritage breeds in the country, known for its rich flavors and fat - but also its friendly demeanor on the farm.  The "whole hog" dinner pairs dishes made in the Italian tradition of using all tasty parts with an exceptional selection of Coppola wines.

 

Chef Craig DiFonzo puts his heart & soul into whole-hog projects and is a great supporter of local farmers.  Mulefoot farmer, Amy Grabish, will be at the dinner to give a brief overview of the Mulefoots - and to answer any questions.  Most recently, a Mulefoot Hog from the herd was the hog of the winning chef team at Cochon555 held in St. Helena, CA.  (www.cochon555.com)

 

Celebrate elegant wines, rare-breed heritage hogs and an amazingly savory menu this Wednesday at Rustic, at the Francis Ford Coppola winery in Geyserville.
