Three sessions, all on Cabernet. Each class ends with a small-plate dinner that pairs with the wines we have tasted, plus introduces some new ones. $139 plus tax for all three classes and all three dinners; a portion of which goes to the Brown Dog Foundation.
Session 1: Sunday, February 12th @ 6:30pm
Cabernet in Bordeaux blends; France, South America, other places; oak, fruit, tannins, nose - finding the balance. Chemistry of Cabernet. Does 2% matter?
Session 2: Sunday, February 19th @ 6:30pm
Napa Cabernet - Spring Mountain, Howell Mountain, Yountville, Oakville, Rutherford. Does terroir matter as much for Cab? Fruit vs. dirt. Decanting.
Session 3: Sunday, March 4th @ 6:30pm
Cabernets by price point: 5 Cabs, $10 - $150 retail (so, $29 to $200 in the restaurant) tasted blind. Food pairings with Cab. Opening up: time vs. aeration.
