There is definitely a huge interest in organic wines now, and the buzz is out that there are many great producers that are changing their ways to meet the demands of today’s consumer. However, very little light is shed on the mother of all organic procedures – biodynamics. On a recent trip to Chile, I had the chance to pick the brain of Alvaro Espinoza, owner/winemaker of Antiyal, one of two certified biodynamic producers in his country. I came home with an entirely new perspective on this farming method and am excited to share my discoveries! This dinner will feature biodynamic wines from around the world (including Antiyal) paired with a 3 course meal designed specifically to highlight these wines, by Executive Chef Scott Quis.
