The Dauvissat Domaine, along with the Raveneau brothers, are the two greatest properties in Chablis. Their production methods are relatively the same. The main difference being that Dauvissat does not stir the lees in barrel which is a practice that is universally done in the region. He also does not use finning. These are pure, age-worthy, terroir-driven wines that are capable of matching, or even topping, the best sites on the Côte de Beaune in complexity, texture and longevity. At their best these Chablis offers great breed and elegance, and twenty years or more of positive evolution in the bottle. This will be an excellent illustration of the top terroirs in Chablis. Wines include: 2002, 1998, 1986, 1990, and 1996 Les Clos; 2005, 2002 and 2000 Preuses; 2005, 2000, and 1996 Vaillons; 2002, 1996, and 1995 La Forest.
