Wine and Dine Mondays have become a favorite tradition at Beacon Hill Hotel & Bistro. The two series, one in the spring and one in the autumn, give our clients an opportunity to interact in a relaxed enjoyable environment with owner Cecilia Rait and Tracy Burgis from M.S Walker while savoring four wines along with four courses specially prepared to complement the wines by Executive Chef Josh Lewin.
The night is convivial, informative and always fun. The dinner begins at 7 p.m. and space is limited. Four wines and four paired courses are $60 per person (not including tax and gratuity).

In football, "hang-time" has a very particular meaning. As it does in basketball! In wine-making, "hang time" is the length of time grapes are able to remain on the vine before being picked. Higher altitudes mean longer "hang-times," which assists in the accumulation of acids, sugars and flavors. For this night, we have selected four wines "with altitude" from very different parts of the world.
Along with Christianity, European vines were brought to Chile by Spanish conquistadors and missionaries during the 16th century. Even with all that history, it is only during the last twenty years that the international market has truly been interested in Chilean wines. During this dinner you will find out why Chile is now the fifth largest exporter in the world.
