Truite B la Bordelaise Seared sage rubbed ruby trout accompanied by roasted cauliflowers, baked dumpling a a roasted shallots merlot sauce

2007 Madiran l’Esprit de Basté

Filet de Porc B l’orange, Medallions of roasted pork tenderloin with a tangerine marmalade

Andouille B la Basque spicy andouille sauteed with peppers and onions, sprinkled with espelette spiked with grits and corn finished with a squeeze of lime
