Originating in Valencia, and cooked in a paelleras pan, there are several variations of this dish. The Valencian dish consists of rice, green vegetables, meat (rabbit, duck, and chicken) snails, beans, and the most expensive spice in the world, saffron. Others only include seafood, but tonight we will be preparing Paella Mixta, which includes both meat and seafood. Nothing goes hand and hand with Paella and the classic Rioja (Red) Sangria. A carbonated wine punch that is a bit acidic, fruity, and sweet. Delicioso!
