menu and wine tasting event offered. The Art Institute of Seattle student-run
restaurant Portfolio, which showcases the culinary skills of final-quarter
students in the “à la carte” class, is offering a Valentine's Day-inspired
dessert menu along with its regular dining menu for one week. Desserts include
the Pavlova, a toasted soft Italian meringue piped in a heart shape and filled
with creme anglaise, fresh fruit, and raspberry coulis, and a Raspberry Cream
and Chocolate Ganache Lollipop with fruit coulis.
The dinner menu is
a 3-course prix fixe menu for $23.00. Each course offers several options
including dishes such as a daily soup; Pear and Spinach Salad; Penn Cove
Mussels with Roasted Fingerling Potatoes, Bacon Belly, and Sage Cream; and
Seared and Roasted Breast of Hen with Mushroom Farro and Walnuts. Dessert is
included in the price.
A wine tasting
event will also be held on February 10 featuring wines from Washington state
and France. The tasting will be led by Sommelier Dieter Schafer, CHE, FMP, MIH,
who has more than 40 years of restaurant experience.
Portfolio is open
Wednesdays-Fridays for dinner from 5:30 to 7:00 pm. February 8-10: Valentine's
Day dessert menu available. The first 24 dinner guests on February 10 will
receive a flower gift. February 10: Wine Tasting from 5:00 to 6:00 p.m.
