For the third year running, Chain Bridge Cellars is excited to offer you the chance to spend an evening with the world's most famous bean and meat dish, Cassoulet.


While Cassoulet is best known as a French dish, it's really just part of a family of bean and cured meat casseroles eaten on cold winter nights across all of southern France and Spain. Chef Jacques will feature a Basque take on Cassoulet (think Chorizo vs. Toulouse sausage) as importer Jonas Gustafsson presents hearty Spanish and Portugues wines along side. Here's the menu:

 

Grilled marinated sea scallop in orange over fennel confit 

Brunoise of Provençale vegetable in a saffron tomato dill sauce

Roasted goat cheese with fresh herbs
