Chef Timon Balloo has created a melting pot of diverse flavors and intricate cooking styles at his flagship Sugarcane Raw Bar in Miami’s Midtown area. This afternoon is an exploration of Balloo’s creative concoctions featuring Caribbean, Asian, Latin and innovative profiles, sometimes all in the same dish. Tasked with pairing wines for this omni-present taste bud affair is Master Sommelier Andrea Robinson. We may have given the author of Andrea Robinson’s 2011 Wine Buying Guide for Everyone: 1000 Wines That Matter, the toughest task of anyone at the Festival. Balloo’s imagination knows no boundaries and Robinson’s wine knowledge is second-to-none. The Festival’s lifestyle seminars are a great place to start or supplement your wine and pairing education.
