Southern comfort food is as diverse as the regions from which it’s derived from. To help us wade through the complexities of grits, deep pit barbecuing and étouffe we’ve brought in Linton Hopkins, a FOOD & WINE Best New Chef winner. Linton owns Restaurant Eugene in Atlanta. Joining him in sharing the incredible flavors south of the Mason-Dixon line is international wine personality Josh Wesson, author of the book Williams-Sonoma Wine & Food—A New Look at Flavor. Josh will play pairing sidekick to dishes which are filled with traditions of the American South, especially the Georgia region where Linton perfected his craft. The Festival’s lifestyle seminars are a great place to start or supplement your wine and pairing education.

2. Citrus Cured Mountain Trout, Buttermilk Custard and Benne Tuile
3. Chicken Liver Pate, Bread & Butter Pickles and Pain au Levain
4. Pimento Cheese Fritters with Pepper Jelly
5. Shrimp Rillette and Shrimp Crackling with Preserved Chili and Scallion
6. Sweet Potato Dauphine, Spiced Pecan, Whipped Fatback and Lemon Chutney
