Cheeses do have their seasons; they also have their peak stages of ripeness. A favorite cheese should be at peak (à point), it should have a balanced flavor profile, and the aroma and texture should be appropriate for its type. In this class you will taste a range of cheeses that have been chosen because they are at their best right now. In this single session class you will learn how a Fromager assesses a great cheese, and how it can be enhanced with a fine wine.
