Portfolio Restaurant serves as an educational
dining lab for culinary students at The Art Institute of Seattle. Open to
the public, the restaurant presents a tempting menu of fine-dining courses
emphasizing fresh seasonal favorites. Portfolio Restaurant, with a stunning
view of Elliott Bay, offers elegance at an affordable price.

Fine-Dining Etiquette Seminar and Wine Dinner with Maitre d'Hotel Dieter Schafer.

 Portfolio, the teaching dining room of The International Culinary School at The Art Institute of Seattle, invites the public to an Etiquette Seminar. Enjoy the breathtaking view of Elliott Bay from the fifth-floor restaurant as you learn about fine dining etiquette.

 Table manners play an important part in making a favorable impression. Learn how to be more polished and socially savvy for your next fine dining experience.

 Certified Educator Dieter Schafer possesses vast international hospitality experience. Join him as he covers the dos and don'ts of fine dining over a four-course dinner with wine. Dieter will address questions of etiquette, ordering in a restaurant, pairing food and wine, how to complain and compliment, guest-server relationship, tips on tipping, guidelines for hosting a dinner.

 Matching wines from Washington wineries Mountain Dome, Willis Hall, and Wilridge are served and a wine tasting primer is included.

"Open-That-Bottle-Night" Dinner with Sommelier Dieter Schafer.

 Take part in a tradition started many years ago by wine writers for The Wall Street Journal. We celebrate OTBN #13 when people all over the world finally open that one special bottle and celebrate the memories that come with it. Create your own three-course menu accompanied by that bottle of wine you bring. Corkage fee waived (wines from restaurant's list available). Your sommelier for the evening is Wine Educator Dieter Schafer who will assure flawless wine service.
